GOYA: Yellow Rice with Red Beans and Sausage

Ingredients

1tbsp. GOYA® Extra Virgin Olive Oil

½lb. sweet Italian sausage

2 stalks celery, thinly sliced (about ¼ cup)

½ medium yellow onion, finely chopped (about ½ cup)

½ red bell pepper, finely chopped (about ½ cup)

1box (7 oz.) GOYA® Yellow Rice

1can (15.5 oz.) GOYA® Small Red Beans, drained and rinsed

Directions

Step1

Heat oil in 12” skillet over medium-high heat. Add sausage. Cook until golden brown all over, about 3 minutes; transfer to plate and cut into ½” slices. Add celery, onions and peppers to same skillet. Cook, stirring occasionally, until vegetables are soft, about 5 minutes more.

Step2

Add contents of yellow rice mix, 2 cups water and reserved sausage to skillet. Bring water to boil. Reduce heat to medium low. Simmer, covered, until rice is tender and water is absorbed, about 25 minutes, stirring in beans after 20 minutes.

Step3

Remove pot from heat. Stir gently to combine. Serve warm.
